I have enjoyed a number of MFM threesomes with couples, but I would avoid a scenario like yours like the plague. I would advise people only to play with others where there is full agreement beforehand by all participants. A scenario like yours is fraught with danger - how on earth can you be sure that your partner will be in the mood for a "surprise" as you call it? Complications could so easily occur, at worst an assault charge!

Suggest you two have a good long chat about what you want. Limits? Keyword for no-go? How do you each feel?
If your intention is to have you gf drunk on the arrival of the single male, what happenes in the morning once she is sober and realises she may have been "technically ". Not only you gets busted mate, the single male would be too.
A warning to anyone else here too, make sure the Mrs is sober when you arrive !!!!
Same here, I would not go near either.
