easy food for the single person

Hi all this is my first post so be gentle with me, i'm a single guy 44 years old and a busy person you know what i mean .. normal day..get up .. rush rush rush.. travel to work. do work. travel home .. (hopefully if the bleedin trains are on time mad ).. walk dog .. do shopping... bla bla bla... but if you are anything like me I can't stand those "meals for one" "cook in the bag" etc .crap.. (can I say crap ??). plus you look a sad git buying them rolleyes .. so i propose if you lot throw a few things in the hat I'll give you some tips on what to do with them .. I have read a few cook books and the things I have in my head are the best bits from them .. wink

Pizza, Chinese, Indian, Fish & Chips and MacDonalds. That should cover Monday to Friday
Before you start your recipes Steve try useing a pan cos a hat sticks to the hob.

Right you want ingredients eh. Well here goes I'll start the ingredients and I am sure others will add more............................
Lamb (my favourite)
cous cous
lemons
advacado
chilli sauce
red and green peppers

I too cook for 1. I find rice goes with everything, and pasta and then add a sauce to the pasta and that makes a hearty meal. You could also cook a joint of meat and eat what you can then have the leftovers in sarnies for your lunch.
Well I could go on but I am not, but there are endless possibilities. Chicken that goes with everything.

I don't understand the issue. Where's the problem with Krackawheat and cheese? You can have it with Branston pickle, French mustard, Brinjal pickle or just plain naked. While you're eating it you can chat online, play patience or watch 'ER'. Total bliss. A Bud or a glass of wine - no washing up. (You just wipe the plate and stick it back in the cupboard. Who said "What plate"?)

Female 46 - single..... cook for myself all the time but then end up with chilli for 4 days and then shepherds pie for 4 days, then lasagne for 4 days... getting my drift......... hee hee
Actually freeze a lot of it, rotate the dishes and don't have to cook from scratch everyday...... it works...
HOWEVER...............
I love sharing cooking with someone while downing a bottle of wine and chatting......... you can never tell whats for pudding then..... redface

Corrie... like it.. :idea: . chop up your lamb and marinate in a smidgen of Jamacan jerk paste... (AND I DO MEAN A SMIDGEN)... in the mean time chop up the advacado, green, red peppers and an red onion place in a shallow dish and squeeze over the lemon use as a side dish !!, put the lamb on skewers with smallish mushrooms brush with olive oil and grill till cooked serve on a bed of rice and save the chilli as the jerk will rock your socks off ...... I know what you mean about cooking and eating it the next day... on occasions i do a lamb curry that lasts a week... (I am in lazy barstuard mode tho when i do that ...)..... thanks for responding .. and the hat .. OR pan is still open smile

Can you tell me where to buy caution from? I've looked in all the shops and it just isn't there, I've even looked on the shelf right next to the jerk paste but they must have run out. :wink:

Quicky easy (veggie/vegan) dinner is :
Pasta (penne ideally),
Hummous,
Juice of 1 or 1/2 Lemon,
2 Tomatoes roughly chopped,
Some chopped spring onion,
Olive-oil.
Cook the pasta, drain in a colander. While it's draining return the pan to the heat and dump in a dollop of olive-oil, the hummour and lemon-juice. Stir for a tiny bit till it's warm and add in the tomato, spring onion and the pasta back in. Take it off the heat and stir it to mix it all through and serve with lots of black pepper.
Yummy and only takes 10 minutes smile
A packet of Smash
A tin of corned beef
A kettle of water
Take a bowl, make up Smash using boiling water. Whilst its still hot, mix in the corned beef and serve from the bowl.
Add a knob of butter, if you want real luxury.

that sonuds realy nice.. and i'm not a veggie.... i'll try that .. but rr sorry to be Mr Thicky but whats hummose ??.. and no wise cracks from the previous post's.. ???? sorry billyboth .. but there are some "banter merchants" on here smile .. but its good fun :P
Humus
A popular creamy dip made from chick-peas.
You will need
(serves 4-6)
200g dried chick-peas
4 large garlic cloves, peeled
7 tbsp extra-virgin olive oil
3 tbsp tahini
1 tbsp lemon juice
1. Place the chick-peas in a large bowl. Cover with water and leave to stand for at least 12 hours until they double in size.
2. Put the drained chick-peas in a saucepan and add twice the volume of water. Bring to the boil for 10 minutes.
3. Lower the heat and simmer for 1 hour, until the chick-peas are tender.
4. Drain the chick-peas. Put the olive oil, garlic, tahini and lemon juice in a food processor and blend until smooth. Add the chick-peas and blend until they are finely ground. If the mixture is too thick, add a little more olive oil.
5. Transfer to a bowl, cover and chill until ready to serve. To serve, drizzle with some olive oil, sprinkle a little paprika over and garnish with fresh coriander.

Tahini is the equivalent of peanut butter; only it is made from 100% crushed sesame seeds. It can be used as a sandwich spread, or mixed with a variety of other seasonings such as garlic and onion or cayenne pepper for a tasty dip or salad dressing. Tahini is a key ingredient in humus, the traditional Middle Eastern chickpea spread.

You can buy it in supermarkets - usually in with the salsas and dips in the regrigerated section. Someone's posted a recipe too if you want to make some (it's much nicer home made - and about a 10th the price!) :)

No Bella... jerk paste is a jamacian spicey thingy... its normaly found around the sharwoods, pataks, curry sauce. area... good hunting
