I've seen the phrase 'NSA fun' mentioned quite a few times but I can't work out what it means.
Perhaps you could enlighten me?

Basically it means that the person does not want to become friends or form a relationship. It's not quite a one night stand but it's close.

Nope, you're all wrong: NSA is National Sheep Association (go on, Google it if you don't believe me...). So, 'NSA fun' sounds rather interesting.
