Pancake Tuesday ... mmmm

I stopped tossing when it stuck to the ceiling too often. Or are we talking about pancakes?
I always make a few savoury pancakes first. A favourite is cheese, spring onion and shredded ham left on the surface until the cheese melts then rolled. This year I did one filled with mushrooms cooked in butter. That was good. One was filled with home made damson jam. I always finish off with a thick pancake made with grated apple. The apple goes into the batter before the batter goes in the pan. It needs slower cooking and the texture is quite different. It is similar to a French gets butter, brown sugar and cinnamon on it.

Just normal eating apples or cooking ones?
The first apple I put my hands on but usually an eating apple.
Also mashed banana, lemon juice, brown sugar and rum is good.
I should have put a slug of sloe gin into the damson jam pancake but I forgot.

Banana and Cinnamon is good too. Try it in a breville aswell.
