The Turkish do Lahmacuns. These are crispy thin breads with a meat and tomato sauce. You can have them plain or spicy. The sauce is quite fatty.
But they only cost with a side salad. And one is enough for a lunch. Can you beat that? cool
Ohh well done PK, I thought of doing this thread a while ago and forgot!
As pedantic as I am about many things, I am also a purist in the kitchen rolleyes (admittedly I have time at home to do this), has to be real ingredients though and made from scratch.
Lemon and rocket risotto with prawns or chicken on top
Fish pie with trout, haddock and prawns
Beef and red wine casserole with roasted parsnips and potatoes
Roast anything with all the trimmings
Aubergine and tomato pasta with chilli
Prawn noodles with coconut
Chocolate mousse to die for
and many many more....

I make a lot of casseroles as I do them in the slow cooker to make the meat really tender. Although it's a long cooking ttime, once it's in the pot you don't have to do anything.
One of my other favourites is Chicken breast topped with buffalo mozzarella and parma ham served with garlic mushrooms, steamed asparagus & herby roast potatoes
there are a few!
Fajitas/burritos/enchiladas
Chilli
Chilli & ginger pork with egg fried rice
Spinach & ricotta lasagne
Spanish sausage pan fry (potatos, aubergine, courgette, tomatoes, broccoli, herbs, onion and sausages all pan fried together = yummy!)
Chicken Parcels (chicken breast stuffed with rosemary and rocotta, wrapped in parma ham, pan friend to brown and then roasted in foil in the oven. serve on a bed of roasted vegetables)
Pesto crusted roast trout/seabass

Anyway a cheap special of mine is get some pork ribs and sprinkle with paprika and salt, roast in a hot oven until well cooked. Rice, boiled or steamed. Or chips. Fresh salad or veg as you like.
It works for most meats especially chicken. You could also use roast veg.
Then tip all the juices from the meats into the rice for an extra rich taste.
There is a chicken dish I like showed to me by Polish girl I used to know.
Chicken breast fillet
Hammer it with a meat hammer till flattens right out
Dip in beaten egg
season and then completly coat with mixed dryed herbs, a bit more egg coating, then coat with wholemeal bread crumbs.
Gently fry in butter and when cooked, place medium thick sliced chedder cheese on top, put lid on frying pan to retain heat and continue to fry so the cheese melts.
Its quite tasty biggrin

4 chicken breasts
1 tub (300g? i think) of ricotta cheese
2 teaspoons of dried rosemary
1 large pack of parma ham slices (can use proscutio or v thin streaky bacon)
vegetables and olive oil for roasting
recipie for chicken parcels!
Flatten out a chicken breast with a meat hammer (or get your butcher to butterfly it)
in a bowl mix the ricotta and the rosemary together
spread the mixture thickly onto one side of each chicken breast
roll the breast like a swis roll and wrap totally in parma ham (like wrapping a parcel)
heat some oil and butter in a pan and fry until the ham is golden and brown
wrap each portion individually in foil and bake in the oven for approx 30min 180oc until cooked!
make sure you dont overcook as it can be dry!
alongside roast some vegetables (whatever you have lying around such as - aubergine, parsnip,carrot, onion, courgett, cherry tomatoes, butternut squash), if you want and added twist top with haloumi cheese 10min before cooking is finished!
one of my fav best meals to do is Pork fillet in a mushroom and white wine sauce, served with rice or boiled potatoes chuffed up and plunged into the deep fat fryer to crisp the up.
But also do:
chilli (spicey)
lasagne
shepards pie
any roast meat
stir frys always quick and easy (woks dont like electric that well )
beef in beer
etc.......
Love to experiment with recipes its so much fun.
only trouble now is i dont have gas hob any more and electric is not the same as my old range sad

any ladies/couples want me to come round and cook my PM box is always open :grin:
for me i think i will try a cooked chicken. Not a normal chicken, but a chicken stuffed with spices and some veg.
Then roll out some flour, water and lots and lots of salt (i mean lots)
Wrap chicken in fil and then wrap the chicken and foil over the pastry and bake in oven for a long long time.
When its time to eat half a afternoon later be sure to have a hammer.
By the time the chicken comes out the oven it will be like a boulder rock, this is where the hammer comes in handy.
Oh, the other thing there is no smell while it is cooking so there is no givaway smell till it is cracked open.
How is this for a party gossip and trat..... totally different or what?!

i just love cooking, have so many recipe books its unbelievable and will give anything a go
when i go round my mates, she provides alcohol and i provide and cook the food

lol...... last week i went thru a no meat no fish diet.
Boy it was hard work but i made it..... a whole week.
dont go to mcdonalds they only have one burger.... burger king has a choice of 2

nope, i have to stick to fibre milkshakes before i can have the pleasure of blended food!

well im currently having lunch.
A vanilla multi fibre shake.....i cant use the straw as im too weak but its thrilling, its hinged in TWO places biggrin
on my diet i even attempted to do rock climbing..... did i have the energy?! did i balls.
That week i was so tired, i was weak, hands trembling
Try avocado and honey. Very nice.
Or barbecue bacon wrapped around a banana. Also very nice.
