I thought I would always choose 3 sports people but...I am going to go with non sports people for this one.........

Unified Gravity..? What a numskull... huf huf - in the current paradigm of physics gravity is gravity and is not begging to be unified...
Perhaps what you mean is 'The Grand Unified Theory...' aka 'the theory of everything...' where the current 2 physics models - one for the very large - and one for the very small are replaced by just one model - which encompasses both...
Albert Einstein: Once past his initial successes in relativity - struggled to accept emerging theories of quantum mechanics - and thereafter whilst being hailed as a giant of physics for the early part of the 20th century - was considered to be a bit of a dinosaur by subsequent generations of physicists in his own lifetime...
Stephen Hawking: Has many admirable achievements - but for me personally - making it past his 70th birthday when his doctors said he would die at 21 was his greatest...
Sheldon Cooper: Is a fictional character... if he has a contribution to physics - it will be to inspire young fans to become the next generation of physicists...
So basically no. If a grand unified theory is forthcoming - it will be from a new generation that we are not yet aware of...
Although - that doesn't mean that an evening with those three characters wouldn't be interesting...

Damn Blue - you already chose 2 of my three. The only one you missed out was Richard Feynman (a Nobel Prize winning physicist, for those who don't know.)
Einstein I'd love to talk to about ethics and morality as much as about physics. Hawking would be interesting to talk to about Motor Neurone disease and the challenges he's faced because of it. And Richard Feynman, well he was an incredibly fascinating man - safe-cracker, samba musician, participant in the Manhattan Project, and the man who cut to the heart of the Challenger Shuttle disaster investigation. And all 3 of these men have/had fantastic senses of humour, so there would be plenty of light relief amongst the deep thinking.
