Inspired by the very lovely DollyMinxs thread manna from heaven I thought it might be an idea to have a recipe book
Here's one of my fave Indian dishes
Take a leg of lamb trim the fat off if any and score it deeply with a knife then put to one side
take 2 teaspoons of cumin and coriander seeds with seeds of caradamon seeds and dry-fry for about 2 mins till the aroma is released
Peel a 2 ins piece of root ginger with 4 cloves of garlic grind it to a paste with the dry fried seeds and 2 dried red chillies put it in a bowl with 2 teaspoons of ground turmeric same of salt 1/4 pint of yogurt juice of a lemon and mix it well now spread it over the lamb and rub it in well cover it and leave it in the fridge for 2 days
Put a rack on a baking tray place the lamb on top and sprinkle with soft brown sugar put in the pre-heated oven about 220 c for 20 mins then baste well and reduce down to 160 c for 2hr 15 mins then leave covered it for 20 mins and garnish with roasted almonds and coriander
I usualy have it with a plain boiled rice

Yummy... for a minute then I imagined you whispering that in soft honey tones... dang near snapped me chopsticks I did! lol

ooooh thats posh sorry no pun intended
Here's 2 of my faves ( no prizes for guessing my favourite foods rolleyes )
Cheese & Potato Pie
Ingredients
Mashed potatoes ( enough for a generous portion each )
about 1/2lb-1lb ( depending on how many servings ) of grated cheese, the stronger the better
1 onion, diced finely
sliced tomato
mix the onions and most of the cheese into the mash and put into a pyrex oven dish. Place a layer of tomoatoes on the top and sprinkle the rest of the cheese over. Heat in the oven until the cheese topping is crisp then serve with bacon, sausage, grilled tomatoes and mushrooms.
Cheesy Chicken
Take 1 cooked chicken breast per serving, wrap with bacon and sprinkle a generous layer of cheese over the top. Grill until cheese is crispy, add a dollop of bbq sauce and serve with jacket potato and coleslaw
I'm blimmin starving now !
The other half loves cheese to distraction, good dishes to do Sassy!
I have a cookery query actually... never been able to poach an egg!! I've had all sorts of suggestions but they still give up the will to live and expand into foam and mush....a poacher pan is too easy...

The trick is to make sure the water is bubbling and don't leave them in too long or the yoke goes hard.
I'm off for some poached eggs on toast now bolt

Make sure the eggs are as fresh as possible
Add a splash of vinegar to the water
Water should be simmering - don't let it boil
Stir the water to get a whirlpool effect just before you put the egg in

Also newly available as bbq'd - although, the parma doesn't crisp as well as when she does it
Veggie Flan.
Make of buy wholemeal pastry and roll out to fit flan dish.
Bake blind.
Filling
A mug full of red lentils and a mug full of green lentils, cover in water and boil for 20 mins.
Chop an onion finely and fry on a low heat to soften, along with a couple of cloves of miced garlic.
Drain any remaining water from lentils and add onion and garlic.
Add a few tablespoons of tomato puree and a tin of chopped tomotoes, shove in a teaspoon of mixed herbs if you have any.
Spoon filling into flan case and top with grated cheese (any will do)
Bake at gas mark 4 (ish) until cheese is golden and bubbly.
Can be eaten hot or cold and is suitable for non-veggies (tastes like bolognese).
If you need to have meat just throw in some stirfried chicken or grilled bacon.

Have you found my wifes cook book lol ??? It's been one of my favs for years (like it cold as well)
As we are Veggies we do not have the meats.
Oh I forgot = The wife says add a small anount of Mustard Powder = it brings out the taste of the cheese,
And for a change use chopped Red & green peppers with the onions as well.

I've tried that but I just can not get it right and it bugs the hell out of me.
Right now I've resorted to making them in the microwave in something I brought from one of those lovely sales books that drop through the letter box rolleyes
:lol2:There are many Lady's out there that can not boil water without burning it.
and there are many men that will eat it.

Leek and Mushroom Bake
Chop leeks and mushrooms (as many as you want to fit in dish) and place in pyrex dish.
Nuke until soft. Also works well with broccoli and/or cauliflour.
Put two tablespoons (ish) of cornflour in a measuring jug and mix to a paste with milk. Add milk to make up to a pint.
Add a couple of handfuls of grated cheese and season with salt and pepper
Nuke until cheese is melted and sauce thickens.
Pour over veg.
Top with grated cheese
(can also par boil potatoes then slice thinly and place o top before adding cheese)
Bake in warm oven until cheese goes brown and bubbly.
Serve with crusty garlic bread.
Can also throw in stir fried chicken if need meat,

ok nobody seems to have put any sweet stuff on here yet so here goes smile
chocolate roulade....
you need...
6 eggs
6oz caster sugar
about 6 to 8oz good rich dark chocolate (not sure of exact amount it depends on quality & how rich is required :) )
double cream
orange segments or tin of black cherries
optional.. a splash of cuantraeu (is that how you spell it?) with orange or rum with black cherries
take six eggs & seperate them (easiest way crack into hand & let white run through fingers) make sure no yolk gets into whites as they have to be whipped & they wont go stiff if any gets in them!
start whipping the whites till they form stiff peaks
next in another bowl whip the yolks & caster sugar till it turns almost white & is also stiff
place chocolate in microwave & melt or place in bowl over pan of boiling water if you dont have microwave!!!
fold the chocolate into yolk mix then fold in the whites
place on parchment paper on shallow baking tray in hot oven about 400 degrees for about 10 mins check by sticking a skewer in it if it comes out clean its done biggrin dont open oven while its cooking or it may not rise!
while cooling on wire rack whisk the cream untill stiff
assembly...
place sponge on clean tea towl splash with cauntreau if required spread cream over it then place orange segments on the cream or use the rum & black cherries
take hold of tea towl & roll up into a swiss roll type shape
trim ends (chefs perks) & let it melt in your mouth

as above but if still having trouble use a large pan & put the whole eggs into the water for a few seconds it just starts to set the outside before you crack them into water
& the important bit loads of freshly ground black pepper biggrin

Ah sheddy, i can tell your a bit of a culinary genius, Le wizzard de la cuisine"
with flair panache, style, and plenty of thought and care going into creating your dishes :D
May i be so bold as to suggest a tiny adaptation to the french classical dish you speak of?
Finish your dish off with a "suggestion" of grated chedder over the beans then "flash" the dish under the grill ( au gratain)for 1 minute, or until the melted chedder envelopes the beans creating two very different but wonderful flavours that complement one another perfectly.
This adaptation of your classic dish is called "the cheesy beano" or as those French master chefs call it, "Le harricot fromage"  wink
