I was wondering what it is that you class as your own speciality in the kitchen. My classic is Pea, Prawn and Mint rissotto. It's one of those things I can rustle up after work with very little effort.........I love to cook and love cooking other things but this is always my safe meal when I have people coming over for dinner and don't have time for anything else.......
so I'm asking you guys.........what's your best quick to prepare meal that works everytime...........

I do a wonderful chicken dish which is cooked in foil and baked in the oven. I change the ingredients every now and then but it's mainly chopped onions, bacon, red peppers, mushrooms, fresh herbs, sea salt and ground black pepper. Wonderful served with new potatoes and salad smile
My other speciality is banana cake, although recently I have been experimenting with other cakes... So far I have made raspberry and chocolate sponge and chocolate and banana cake.... Can you see a bit of a theme here?? :lol2:

Don't have any fav's just look in the cupboard and rustle something up, tonight we had sausage and onion pie with a hint of sage with spring onion mash on a bed of minted runner beans.....its only cooking guys its not rocket science biggrin

Depends how many im cooking for. I have to cook most things in a flucking cauldron(thats what the kids and my friends call my cooking pots) in my house as it is,as there is 9 of us :shock: .
Ive gone right off cooking tho so if i have to cook its a curry or spag bol is always good for a laugh when having visitors......just to see who can get the most down their fronts :giggle:
Used to do the hosting of formal dinner partys with 4 courses ect out of cook books but cant be arsed these days and much prefer informal gatherings now, pref with a takeaway redface

Tuna Speial. Its spag bol with tuna and sauce of tinned tomatos with onion and peppers. Neuvelle Cusine to me when I was a Student and ready in about 20mins.

I love to cook when I have the time....but my quickies are pastas, mexican and curries.
I do a lovely pie, and nice cakes when I can be bothered. Must admit restaurants do win over a lot these days confused

Stuff~ya~can~eat!
the ingredients vary, as do cooking times, amounts, servings, and general mess/choas in the kitchen...
but, all the same, the air in said kitchen can turn Ramsey-Blue in an instant, so I must be doing something right!

I love to cook....but I hate to clean up after....so can go with you on the mess front!! I need a cleaner I think!!

Personaly, leaving the kitchen to it's own devices, post-cooking, I find it slowly, over time, develops a *sheen* all of its own.. a rather special patina... at least in my own eyes...
... although shovels, chisels, brushes >and indeed further curses< are employed at the imminent arrival of a potential guest... even then... I daren't let them venture past the doorway to kitchen... for fear of contamination.
grief! I paint a good picture of myself here...
off to the kitchen to assemble another speciality...

Hot spicy chilli chicken with deep fried potato skins over green salad with sour cream on the side!!!
Mind you shireens foil cooked meal. Whoa now we talkin....
I like to cook a bolegnase type thing, it's amazing and completely healthy....
Get some minced beef, fry it off and drain the fat.
Cut up some onions, mushrooms and pepper.
Put the veggies in with the minced beef and pour a tin of tomatoes over it.
Water down if needed.
Fry until all veggies are soft.
Add seasoning (I like garlic, salt, pepper and chilli powder)...
mmmmm yummy!!
btw, that's probably the only thing I can cook...LoL

Washed down with a crisp cold bottle of corona ...

As a whole i enjoy cooking, just need more people to cook for, my folks dont seem to share my palette for foods sad

mmmm I do this, try with passata instead of tinned toms, add a little chilli and garlic, serve with crusty bread.. :lickface:
Using mediterranean food stuffs will generally give you a fast easy to make meal. Olives, halloumi cheese etc. They can be stored and used when needed. Flatbreads last quite a while. Hummus needs to be eaten soon, but its easy to find now.
For a full on scoff to be quick, I use a pressure cooker. Curries come out very tasty as do all stews and long cooked food.
Wrap all herbs in kitchen foil and leave in the fridge. They should stay fresh for at least a week.
left over spaghetti or rice can be stored in a plastic bag for a few days. This all helps to have your basics on hand for a quick feed.
There are some dishes that just can't work easily in a home kitchen. The elaborate ones with lots of preparations, I don't do. Although I have made sourdough bread from grape yeast.
Some of the best food I ate was cooked in an AGA. You can not beat AGA top toast.
A good chicken stock is the basis for noodle dishes. These are great fun to do. The stock is easy to make and can be frozen to make soups later.
If all else fails its bacon and beans.
Visit the market at lunchtime: buy fresh squid and tiger prawns.
This evening: clean and chop squid and prawns, fry quickly in butter with garlic and hot red chilli both chopped fine, pour on cream and let thicken; serve on tagliatelli, with sliced tomatoes and basil alongside.

As for the mundane tuesday night tea for the kids ( who refuse to eat the same things) it drives me nuts!

We recently discovered Fajhitas! They're soooo tasty and soooo easy to make!
I make a wicked beef and red wine casserole with herby dumplings, and a great Sunday roast. Mmmm - yummy! :lickface:
